Biscuit Manioc is an icon of Mauritian culture. Accompanied by a cup of tea or coffee, these squared biscuits have a distinct taste reminiscent of the olden days since they served as a staple during the First World War. The artisanal production has not changed in 150 years of existence, and you will get to watch the factory in action.

About the Biscuiterie H. Rault - Traditional Biscuit-Making in Mauritius
Mauritius has some amazing foodie finds- and Biscuit Manioc (or Cassava Biscuits) is definitely one of them! Head to the H. Rault Biscuit Factory to learn more about this unique local treat and taste it fresh from the source!
Located just outside the historic town of Mahébourg, the biscuit factory (part of a family estate called "Les Délices") owned by the Rault family, began operations in 1870 with the production of manioc biscuits. The factory has hardly changed since.
During World War I, the biscuit factory played a vital role in feeding the local population, expanding its production. However, in the 1980s, due to a shortage of cassava and a difficult economic climate, the factory came close to bankruptcy and had to import dried cassava from Madagascar.
Despite the hardships and they’re still here, relying on visitors like you to support the family-owned business - which has been nominated to be on the National Heritage list.
Witness the Authentic Biscuit-Making Process
As you enter the factory, you will take a trip back down memory lane with some of the equipment dating back to the early 1800s, such as:
- Weighing equipment
- A real well
- Remains of a small artisanal sugar factory chimney
- An energy-free water pump mechanism called "ram"
You'll notice the process has stayed true to the original in that most of the operations are done by hand - from the sifting to baking and packaging. The oven is also powered the old-fashioned way - through the burning of dried leaves. Within minutes, the biscuits are ready and packed.
About the Manioc (Cassava) Biscuits
Made from cassava flour, these biscuits are a local favourite and available in various flavours. This family recipe, passed down through generations, was created by Hilarion Rault to recreate his father’s Breton shortbread and galettes.
While some argue that all the biscuits taste the same but a connoisseur will know the flavour when tasted.
Good to Know: Manioc biscuits don't contain any preservatives, colouring or binding agents and are also gluten-free!
